How To Make a Gorgeous EID Cookie Tart

How gorgeous are these EID cookie tarts?! These letter/number tarts were started by pastry chef Adi Klinghofer back in 2017. They became super popular at that time and then disappeared. Now they have made a comeback this year again! Here's how you can assemble one yourself:

You want to make three letters spelling E-I-D. Each letter is made with an almond sable base, which you can find a recipe for here. The cream colored dollops you see are pastry cream.

How to assemble: For each letter, you put together a layer of the letter cookie, then the pastry cream dollops, another letter cookie on top, and another layer of dollops. I love to decorate mine with with fresh flowers, strawberries, macarons, meringues, and blueberries covered with edible gold glitter. Different types of chocolates can also be used on it to make it even more beautiful.

These are a labor of love, but so worth the time and effort when you see the finished result. Check out photos and a video of me decorating below!
